Ingredients and spices that need to be Get to make Moong Dal Khichudi & Sada Labra:
- For Khichudi
- 1 cup Moong Dal
- 1/2 cup grated coconut
- 1/2 cup Gobindobhog Rice
- 1 medium tomato chopped
- some Cauliflower florets
- 2 baby potatoes peeled or 3 medium potatoes peeled and halved
- 2-3 whole green chilies
- 1 tsp whole garam masala
- 1 tsp cumin seeds
- 1-2 bay leaf
- 1 whole red chilli
- 1 Tbsp ginger paste with 1 tsp turmeric powder and 1 tsp cumin powder with 1/4 cup water
- as required Salt
- as required Sunflower oil to fry veggies and rice
- as required Mustard oil to cook
- as required Ghee to drizzle on top
- For Sada Labra
- 150 gms Aubergine cut into cubes
- 150 gms cabbage chopped
- 150 gms cauliflower florets
- 150 gms potato peeled and cut
- 150 gms sweet potato peeled and cut
- 150 gms pumpkin peeled and cut
- 1 Tbsp ginger paste with 1/4 cup water
- as required Salt
- as required Sugar
- 3-4 Tbsp mustard oil
- 2 Tbsp ghee
- 3 Tbsp Panchphoron - 2 Tbsp to be made into coarse powder and 1 Tbsp to be used later
- 3-4 whole green chilies
- 1 bay leaf
- 1 whole red chilli
- 1 cup milk
Instructions to make to make Moong Dal Khichudi & Sada Labra
- For Khichudi - wash Gobindobhog rice and drain, spread on a plate to dry. In a pan roast Moong Dal and wash, drain and spread on a plate to dry
- In a pan heat sunflower oil and add rice, fry until translucent and set aside. In the same oil add cauliflower florets first and fry, set aside, then add potatoes and fry, set aside
- In the same pan heat mustard oil and add bay leaf, whole red chilli, cumin seeds, whole garam masala and fry for 1 second. Add grated coconut, add ginger-cumin powder-turmeric powder watery paste and on medium flame cook until raw smell leaves. Add rice and Dal and cook for 2-3 mins
- Add chopped tomatoes, cover and cook for 2 mins, add rice and Dal and whole green chilies and add 2 cups hot water. Cover to cook and in between stir as Dal tends to stick at the bottom
- Remove cover and add fried vegetables, salt and more hot water until the rice and Dal are cooked. The consistency should be semi thick, add ghee and garam masala powder and set aside. Khichuri is ready
- For Sada Labra - in a wok roast 2 Tbsp Panchphoron and add to a blender, make a coarse powder, set aside for further use
- In a wok heat mustard oil, add bay leaf, whole red chilli, 1 Tbsp Panch Phoron and stir for 2 seconds to get an aroma, add ginger mixed in water paste and stir for 2-4 mins.
- Add vegetables based on the time it takes to cook. To start with potatoes first, followed by cauliflower florets, sweet potatoes, pumpkin. Stir for 3-4 mins, when veggies soften add Aubergine, cabbage and mix well, add salt and cover to cook.
- With a cover on due to steam the veggies will be cooked and no extra water to be added. Add milk at this time, cover to cook for 2 mins
- Add whole green chilies, sugar and mix well, add ghee and drizzle the coarsely powder of panchphoron. Stir and set aside covered
- Plate Khichuri with Sada Labra and enjoy a wholesome main course meal during this festivity
